Chef Gabriela Cámara, known for her Contramar restaurant in Mexico City, is expanding her culinary offerings with the opening of Cantina Contramar at Fontainebleau Las Vegas on Saturday, March 28th. This new establishment promises to merge the essence of Contramar with a broader menu, including meat options, to attract a diverse audience.

The iconic Pescado a la Talla Contramar, a whole grilled fish with red adobo and parsley, will be one of the star dishes. This dish, which has inspired many chefs, is the hallmark of Contramar in Mexico. In addition, other Contramar classics will be offered, such as the dessert cart with strawberry meringue. The chef seeks to broaden the gastronomic experience, incorporating new dishes that go beyond the seafood and fresh produce for which it is known in Mexico City.
The Cantina Contramar menu will present new creations such as wagyu aguachile, rib-eye tiradito, chicken mole enchiladas and braised pork shank in adobo. Cámara's version of the cantina-style Caesar salad will also be included, a selection of tostadas with Contramar's popular tuna tostada, sopes with caviar, and main courses such as slow-cooked short rib, which can be enjoyed as personalized taco experiences with homemade tortillas.
